How much storage space will a Linux operating system take compared to Windows 10.

Depends on the operating system, but also which kind of server you wants to build. The two most popular Linux Distributions are based on Ubuntu or RedHat stander size about 40GB .To install Red Hat Enterprise Linux, you must have a minimum of 10 GiB of space in either unpartitioned disk space or in partitions which can be deleted. Once your server is ready and you fill some more storage need then you can add new disk and extant you file system.
How many GB does Linux take up

if you install extra software, I would recommend about minimum 40 GB. but you can also use 25 GB that is sufficient.
